Vegan Chocolate Banana Muffins – Foolproof Recipe

I’ve got a new muffin recipe for you all. This recipe is vegan and very easy to make and even more versatile. Below you’ll find the recipe for my vegan chocolate banana muffins!

I am not living a vegan lifestyle in general, but when it comes to baking I most of the time prefer it this way. Why? Well, in my case it comes down to convenience. As I am not eating much cake or similar things, baking in vegan enhances the chances that I finish eating it before it turned bad. Basically, almost anything with an animal as source rots much faster than a vegan product. So to me, this is a huge benefit and a dietary change, which is also a good thing.

Vegan Banana Chocolate Muffins: Why easy?

It’s really an easy recipe. Mix and mash up all the wet ingredients. Then add all the dry ingredients and mix until you have a smooth and slightly sticky dough. That’s it!

You can do this faster than your oven pre-heated. If that isn’t foolproof easy, then nothing is.

Vegan Banana Chocolate Muffins: Why versatile?

The versatility of the recipe is mainly driven by the apple sauce. I used apple-mango sauce because I had it at home. But you can basically switch it in whatever you feel like. There are so many premade fruit sauces on the market nowadays that this gives my muffin recipe an almost unlimited range of possibilities.

You could also add a little more sugar, or a different sugar to change the taste. Especially if your fruit sauce is unsweetened this gives you ample room to play around.

Not in a chocolate mood, just skip it and add a few blueberries instead. Or how about some chopped up nuts or maybe some poppy seeds?

Instructions
  1. Add all the wet ingredients into a bowl and mix until you have a smooth texture.
  2. Then add all the dry ingredients to the wet and mix until all the ingredients have combined to a smooth dough
  3. Fill into your muffin pan and bake at 180°C for around 25 minutes
Recipe Notes

Please note that you don't need any additional sugar for the muffins. The sweetness comes from the banana, the applesauce, the chocolate spread and cacao powder.

As the dough is vegan you can without any issues try it raw first. In case it's really not sweet enough for you, feel free to add some sugar 🙂
